Blueprint Culinary / Food cost & menu engineering

Food cost & menu engineering · Tampa Bay

Your food cost is a systems problem, not a pricing problem.

We find where the margin is actually going, from specs and portions to purchasing, pars and waste, then install the controls that keep it from leaking back out.

Where margin goes

The recipe on paper is not the recipe on the plate

Portions drift

A few extra grams per plate, times every plate, times every shift.

Yields never tested

Costing assumes a yield nobody has actually weighed.

Specials go uncosted

The dishes that change most are the ones nobody prices.

Vendor pricing moves

Invoices creep, substitutions slip through and nobody compares.

Pars set by habit

Over-ordering turns into waste. Under-ordering turns into 86s.

Menu mix ignored

Your most popular dish may be your least profitable one.

What we do

How we bring food cost back under control

Recipe testing and specs

Every recipe tested for yield and cost, with final specs photographed so any cook plates it the same way. This is the foundation everything else sits on.

Menu pricing and engineering

We review menu pricing and COGS against your sales mix, so you know which items to feature, reprice, rework or cut.

Purchasing structure

Vendor pricing, pars and invoices reviewed. We issue RFIs, formalize pricing and set up a repeatable purchasing structure so savings do not depend on one person remembering to check.

Controls that hold

Line checks, quality control checkpoints and prep standards keep execution on spec. On the Performance Partnership, every assessment includes a review of sales mix, labor, COGS and controllables, plus an executive scorecard that puts food cost and labor cost in front of the owner on one page.

The difference

We tell you what is wrong before we tell you what it costs

Plenty of consultants will hand you a costing spreadsheet. The spreadsheet is not the hard part. The hard part is making the kitchen cook to it on a busy Saturday, with a new hire on sauté. That takes specs, training, line checks and someone coming back to measure it.

Food cost work is built into every Blueprint engagement, from Foundation at $25,000 upward. If you are opening a second location, it is also the first thing that breaks. See multi-unit expansion.

Questions owners ask

Food cost & menu engineering FAQ

What is a good food cost percentage for a restaurant?

It depends on your concept, price point and menu mix, which is why we look at it item by item instead of chasing one number. The useful question is not 'what is the industry average' but 'what should each dish cost to make, and is that what it actually costs on a busy Saturday?'

Why is our food cost high when our recipes are costed?

Usually because the recipe on paper is not the recipe on the plate. Portions drift, yields are never tested, specials go uncosted, waste is not tracked and vendor prices move between invoices. We find the gap between theoretical and actual and close it.

What is menu engineering?

Menu engineering looks at every item's popularity and profit together, so you know which dishes to feature, reprice, rework or cut. It turns your sales mix into a margin decision instead of a guess.

Do you just raise prices?

No. Price is one lever. Specs, portioning, yields, purchasing, pars, prep and waste are usually where the money is. We review everything and tell you what is actually wrong before we tell you what it costs.

How long does it take to see results?

Food cost and purchasing review is part of every engagement, starting with the four-week Foundation engagement. Ongoing, the Performance Partnership reviews sales mix, labor, COGS and controllables every eight weeks.
